- a small bunch of fresh tarragon;
- 1-2 tsp sugar;

Rinse the tarragon, tear off the leaves from the stems. Stems cut into pieces 1-2 cm long, dip into boiling water, leave on low heat for 2-3 minutes and let cool. Sprinkle the leaves with sugar, crush, fill with warm water (about 40 ° C) and leave to cool. After 30-40 minutes, pour both infusions together with the leaves and stems into a glass jar and refrigerate for several hours. Tarhun is ready, it remains only to strain it through a fine sieve, pour over glasses, add ice and a few drops of lemon juice.
