How to make homemade noodles for lagman

The appearance and taste of this dish depends on how noodles are cooked for lagman. Learn some secrets of kneading and dough preparation, try different recipes.

How to prepare noodles for lagman at home

Properly cooked noodles are an important part of this dish. It should be elastic, dense, but not rigid. It should not lose its qualities if it is cooked in advance, and warmed before serving.

There is nothing special about the dough. The only requirement is to choose the type of flour. The secret lies in the cooking process, which consists of the following steps:

  1. Prepare the egg mixture. Beat eggs with 1 tsp. salt, add 1.5 stack. water, mix again.
  2. Knead the dough. In a large bowl, pour a stack of 5 stack. sifted flour. Having made a recess in it, pour in the egg mixture, stir first with a spoon, and then with your hands.Put on the table and keep kneading, gradually adding flour to make the dough cool. After about 15 min. it ceases to stick to the hands and the table. Cover it with cellophane and leave for 1 hour.
  3. Make soda solution. He will need to make the dough elasticity. 0.5 stack. water, add the remaining salt and soda, stir until dissolved.
  4. Rub the solution into the dough. Constantly dipping your hands in a soda mixture, first wipe and knead the dough, then pull the sausage out of it, twist it into a bundle, again wrinkle and repeat the operation 3 times.
  5. Make blanks. Put the dough on a cutting board in the form of a flat cake, cut into 2–3 cm wide strips. Lubricate the hands and the dish with butter, stretch the pieces to make them less than 1 cm thick, and fold into a spiral. When finished, cover the resulting spiral with a film and leave for 20 minutes.
  6. Pull noodles. Pull each sausage out of the dough into a thin flagellum, passing between the fingers and twisting a little. Then take it with two hands, shake it, pull it out a little more and put it on the table.
  7. Cook noodles. In a large container lay out flagella one by one in boiling, salted water.After 5 minutes, when the noodles come up, throw it in a colander, put it in a saucepan, mix with vegetable oil.

Before serving, dip the finished pasta into the hot water in which they are boiled, put it in plates and water with a delicious meat sauce. You can use the recipe for homemade noodles for Lagman and simply cut narrow strips from a thinly rolled layer, but in this case you will have to cook it before serving.

Gourmets do not recognize the use of store noodles or spaghetti in the Lagman, but for an everyday table this is perfectly acceptable. If the stretching seems too complicated for you, make ordinary homemade noodles, and serve with it an unusual, but tasty and satisfying dish.
